Monte Albán Reposado starts with 100% Weber Blue agave grown at high altitude in Jalisco's Los Altos region. After an 8 12-day slow roast in traditional brick ovens, the cooked piñas are crushed and fermented with native yeasts for up to 72 hours. Distillation occurs twice in copper pot stills, yielding a supple new-make spirit. The tequila then rests 2 3 months in lightly charred American oak barrels, gaining soft vanilla and toasted oak nuances while retaining bright agave character.
