At Grimm we are fascinated by the process of alchemical transformation through the magic and mystery of fermentation. Our aim is for our fermentations to reveal, develop, and transfigure the flavors of our carefully selected raw materials. So we were thrilled to be asked by Yakima Chief Hops to participate in a trial of their new experimental cryo hop blend, tentatively named Bio-T. The hottest area of hop science at the moment is bio-transformation ? the study of how compounds in hops can be transformed and liberated by interacting with yeast.
