Glenville Moon Mountain District Cabernet Sauvignon

Region & Vineyard:
Hailing from the elevated slopes of the Moon Mountain District in Sonoma County (part of the Mayacamas Mountain range), this Cabernet Sauvignon benefits from volcanic-rich, iron-laden loamy soils and generous mountain sun-exposure — contributing structure, depth and minerality. 

Wine-making & Maturation:
The fruit is harvested at peak ripeness early in the morning and fermented in stainless steel over about 14 days. Afterwards the wine is aged in French oak, typically around 12 months, with about 50 % new barrel influence to add depth and finish. 

Tasting Profile:

• Color: Deep, inky purple with garnet edges. 

• Aromas: Blackberries, ripe red fruits, freshly picked cherries, cassis, sweet oak and hints of mocha/cocoa powder. 

• Palate: Rich and layered with dark fruit flavors (blackberry, black currant), wild berries, spice and mocha notes, supported by firm yet refined tannins and a well-balanced finish. 

Food Pairing:
A perfect companion for hearty dishes — think grilled rib-eye, slow-roasted leg of lamb, aged cheddar or even a flavorful mushroom risotto. The wine’s structure and dark-fruit intensity stand up to rich meats and bold sauces.
