A combination of destemmed and whole clusters are used depending on the vintage and desired outcome for the wine. The Pinot Noir grapes undergo about six days cold maceration in open-top vats for gentle flavor color and tannin extraction. During fermentation, a combination of punch downs and pumpovers are applied. After the final pressing, the juice is moved to oak barrels for native malolactic fermentation.
