Bedford Redhills Cabernet

Bedford Red Hills (Lake County) Cabernet Sauvignon

Region & Vineyard:
This Cabernet Sauvignon is sourced from the elevated terroirs of the Red Hills Lake County AVA in Northern California—an appellation known for its red volcanic soils and higher UV exposure owing to its elevation. 

Winemaking & Aging:
Grapes are harvested carefully at peak ripeness in the cool morning hours and handled to preserve freshness. Fermentation takes place over ~14 days in stainless steel, followed by barrel aging with approximately 50% new French oak, contributing to both depth and structure. 

Tasting Profile:

  • Aromas: Characterized by enticing notes of dried cranberry, cherry and mocha-spice brought in by the oak aging. 

  • Flavours & palate: Rich dark-fruit flavours (especially dark cherry and blackberry), cocoa or mocha undertones, baking spice and sweet oak integrate into a smooth, lingering finish. 

  • Structure & finish: Medium to full body with firm yet polished tannins, supporting the fruit and the oak without overwhelming. The volcanic soils and altitude give it minerality and an elevated sense of place.

Food Pairing:
This Cabernet shines with hearty dishes — think grilled rib-eye steak, lamb shanks, roast venison or aged cheddar. It’s also well suited to richer pasta dishes or as a bold sipping wine on its own.
