Bedford Napa Valley Cabernet Sauvignon

Region & Vineyard:
Sourced from the renowned Napa Valley appellation in California—a region celebrated for its ideal climate for Cabernet Sauvignon: warm days, cool nights, and fertile soils that encourage depth and concentration in the grapes. 

Winemaking & Aging:
The Cabernet fruit is harvested at peak ripeness, typically in the early morning hours to retain freshness. After destemming, fermentation takes place over about 14 days in stainless steel. Post-fermentation, approximately 50% new French oak barrels are used for maturation. The wine is then aged for ~20 months in French oak (for recent vintages).

• Color: Deep, rich hues of dark black and red. 

• Aromas: Intense notes of blackberry, ripe cherry, sweet oak and cocoa powder. 

• Flavors/Palate: Flavors of ripe blackberry pie, cassis, mocha powder and spice detail the profile, balancing fruit richness with oak and structure. 

• Finish & Structure: Medium to full-bodied with firm yet refined tannins, giving the wine age-worthy structure while remaining approachable.

This Cabernet is ideal with hearty fare: grilled or roasted red meats (such as rib-eye steak or short-rib), bold cheese selections, or rich sauces and dishes where the wine’s depth and structure can shine.
