Bedford Monterey County Chardonnay

Region & Vineyard:
Sourced from vineyards in the cool-maritime appellation of Monterey County on California’s Central Coast, where morning fog and coastal breezes help retain acidity and clarity of fruit. 

Winemaking & Maturation:
The grapes are harvested at peak ripeness—often at night—and transported chilled to the winery. They undergo a gentle press and cold settling for 48 hours before being racked into small French oak barrels for fermentation. The wine completes secondary (malolactic) fermentation in barrel and sees weekly lees stirring (“batonnage”) to enhance texture and richness. 

Tasting Profile:

• Aromas: Golden apple, lemon peel, with hints of sweet vanilla and spice. 

• Palate: A rich, creamy mouthfeel balanced by crisp acidity. The oak influence supports the fruit with subtle vanilla and spice tones, while retaining freshness and a lingering finish. 

• Alcohol: For the 2023 vintage, approximately 13.5% ABV. 

Food Pairing:
Pairs beautifully with grilled seafood (such as salmon or halibut), sage-butter chicken, lighter creamy pasta dishes, or simply as a refined-yet‐approachable white for sipping on its own.
