Bedford Alexander Valley Cabernet Sauvignon

Region & Vineyard:
Sourced from the vitally important Alexander Valley AVA in Sonoma County, California — a region characterized by warm days and cool nights which provide ideal conditions for Cabernet Sauvignon to develop rich fruit while maintaining balance. 

Winemaking & Aging:
Bedford picks the grapes at the peak of ripeness in the early morning and brings them to the winery cooled. They are destemmed into stainless-steel fermenters for about 14 days. After pressing, the wine is aged in French oak barrels — around 20 months of barrel aging is noted for recent vintages. 

Tasting Profile:

• Aromas: Bright, upfront notes of black cherry and plum. Some vintages also show candied plum, kirsch and a hint of black pepper on the nose. 

• Flavors/Palate: Vibrant and fruit-driven, this Cabernet features juicy black cherry and plum fruit, along with dried red-fruit undertones and a smooth structure. Some expressions add mocha, sweet vanilla or oak spice. 

• Style & Finish: Bright and fresh for a Cabernet, with good food‐friendliness and approachable tannins. While structured, it remains accessible. 

Food Pairing:
Works beautifully with grilled or roasted red meats (steak, lamb chops), hearty dishes with rich sauces, or aged cheeses. Because of its fruit‐forward nature and balanced structure, it can also pair well with upscale casual fare.
